They are the exact same thing lima beans/butter beans scientific name is phaseolus lunatus. If there were different species of plant, that wouldn't be so. The only real diference is butter beans are the mature bean instead of the picked early baby beans. What you are talking about is probably just heirloom varieties and not the pale green cooked/white dried beans bought from the store. I drink a smoothie made with 2 cups of greens, milk, cocoa powder, and frozen fruit every day. It's a gloriously convenient and tasty way to start my day with greens! Getting older though and drinking that frozen smoothie in the winter is beginning to be a bit torturous:-(. I realized I needed a good beans and greens soup recipe! Still need convenience to work with the work schedule!! So plan to make a boat load and freeze in serving sizes. Can take one out each night to heat in the morning and have a HOT greens breakfast;-). I am seeing a lot of recipes online where it requires three different kinds of expensive cured meats, chicken stock, and all kinds of things, when I knew I had read that it was the tradition on Monday to cook down the ham bone from Sunday supper for Monday's meal. I didn't know that it came from the refugees of the Haitian revolution, that was new information to me, thank you. I was thinking about a pot of chili but beef is very expensive in the US right now, which turned my mind to the much more economical ham available in my area and led me to look again for an authentic Louisiana Monday red beans w/ ham recipe. (I am sure for some people the versions with the other cured meats etc. would have be traditional for them if they were home curing or had access to those at their local markets, but for me those meats are not in our budget, we don't have land or space to do our own home raising or  curing of meats, I'm not in an area with feral hog hunting, and those specialty cured meats are expensive at the store if they can even be found anywhere in my area, but where I am ham is $1.99 /lb - beef starts at $5/lb-  and even has a bone to keep my dog happy, so that is what I will do). I am sure a lot of people of thrift, intelligence, patience, and good taste have been making and enjoying this recipe for centuries, tasty, nutritious and economical! The dark red beans are also anti-cancer from the color (I will make sure to get them to a rolling boil for at least 20 minutes to prevent the red bean poisoning). I have plenty of spices but wondering what the traditional spicing would be. I don't like using spice mixes etc. I like to work with just the natural herbs, if anyone knows the herbs I should use for it. I am looking for a very traditional recipe not nouveau cuisine or fusion. Something from pre WWII that the working class or rural people would have been using from herbs they grew themselves or had easy access to and used as standards in this recipe.
